I am writing to recommend Cayman Sinclair's Lakehouse Caterers for your production. I've made several films in New Orleans & Louisiana, EVERYBODY'S ALL-AMERICAN, RAY and most recently, PARKER, so I know something about crews and caterers in the Crescent City. We recently used Cayman's company on PARKER, and he did a spectacular job. Frankly, I would say his company delivered some of the freshest, most tasty food I've ever experienced from a film caterer. Lakehouse catering was an exemplary partner in providing a fine variety of meals to our emergency services work force during the Gulf Coast clean-up project. We found their service and quality of meals to be excellent and a great value. They provided as many as 1200 hot meals per day including a wonderful breakfast and amazing lunch with variety and consistency. My name is Kris Leichtenberg, and I do Locations for commercials, movies, etc., and I am writing you in regards to Lake House Catering, and its proprietor Cayman Sinclair. I recently worked with Cayman on a History Channel “Swamp People” promo, where Lake House did catering for us. I have to say that Cayman’s crew delivered some of the best food I have ever had on a set. Lake House’s food is definitely a notch above other catering companies. In addition to that, Cayman and his crew were very helpful and caring, and would go out of their way to not only serve high quality food, but also helped production needs by sharing some of their equipment, such as the generator to help run things at base camp. Cayman has one of the nicest catering trailers I have seen, and comes prepared to do what it takes to put smiling faces on crew members by serving and servicing them with great food, and a friendly atmosphere. Cayman Sinclair, Catering Service The LakeHouse In May of 2010 BP asked me to come and help with the clean up efforts in the Gulf as a BP representative. While working in Slidell, LA out of the Orleans St. Tammany Branch, I had the good fortune to meet and work with Cayman Sinclair. Cayman's catering service provided the food for the branch sites and I was very impressed with both the food and his business sense. While the quality of the food was excellent he also presented it in a way that made you feel special. This wasn't just for management, he treated everyone that way. As an example the silverware was not just plastic but was silver plastic. Now this may seem minor but ifhe is that concerned about the presentation, imagine how good the food was! For a time, while working at the Orleans ST. Tammany Branch, I worked as the safety officer for the entire branch and all of its sites. It was during this time that I had an OSHA official come through and inspect the various sites and the catering service. They found a couple of minor issues with the catering service that Cayman immediately corrected, even before they left. To me that was important because if he doesn't correct it, we have a problem with OSHA and I didn't need that. The OSHA official told me later the quality of food as compared to what they had eaten at other branches was exceptional and so much better than what was being offered at the other sites. I also had some inspectors from BP food services that inspected Cayman's catering service and the food he provided. After the inspection, of which they found no violations at all, they told me his quality of food and service was the poster child of how it should be done. If you are looking to have catering changes I believe you can't miss with Cayman Sinclair. He just does it right. Regards Mike Ryan
